Is Pasta Good for You?
Different than what you may have heard, pasta can be part of a healthy diet! It’s a good source of complex carbohydrates, which are an important part of a balanced diet. Pasta is also low in calories and fat, and it’s packed with vitamins and minerals. However, like anything else, pasta should be eaten in moderation. One serving is about one cup, or about the size of a tennis ball.

Colorful Spaghetti Pasta Salad Recipe
Now that we’ve talked a bit about colorful pasta and why it can be part of a healthy diet, it’s time for the main event: the recipe!
Ingredients:
- 1 lb. box thin spaghetti
- 1 cup extra virgin olive oil
- 2 cucumbers, sliced and quartered
- 1/2 c. red wine vinegar
- 1 red bell pepper, chopped
- 2 Tbsp. Italian seasoning
- 1/2 red onion, chopped
- 2 tsp. sugar
- 10 oz. cherry tomatoes, halved
- 1 tsp. salt
- 8 oz. mini pepperoni
- 1 tsp. pepper
- 1 (4 oz.) can sliced black olives
- 1 clove garlic, minced
- Parmesan cheese
- Grilled chicken, sliced (optional)
First, cook the noodles as directed on the package. Next, you want to drain and place the noodles in a large mixing bowl. Then you’re going to add the cucumbers, the red pepper, the half onion, the chopped tomatoes, the pepperoni, and the olives. Stir to combine.
Mix the olive oil, the vinegar, all of the seasonings, and the clove of garlic in a small dish or jar with a lid. Pour the mixture over the dish of pasta. Cover with a lid or plastic wrap and refrigerate the dish for at least two hours or overnight.
Before serving, sprinkle with parmesan cheese and grilled chicken if preferred. Now you’re ready to serve and eat!
