  • 2 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • ⅓ cup cornstarch
  • 2 eggs, beaten
  • 3 Tbsp oil
  • ⅓ cup buffalo hot sauce
  • ½ cup brown sugar
  • 1 Tbsp rice vinegar
  • ¼ tsp red pepper flakes, or more to taste
  • ¼ cup sliced green onions


Preheat oven to 350℉ and coat a 9×13 inch pan with cooking spray. 

Place the chicken pieces on a plate and season with salt and pepper. Sprinkle the cornstarch over the chicken and toss to coat before dipping each piece in the beaten egg. Heat the oil over high heat in a large pan. Cook the chicken pieces for 3-4 minutes on each side until golden brown. Place the chicken in the 9×13 inch pan.

In a small bowl, whisk together the buffalo hot sauce, brown sugar, rice vinegar and red pepper flakes. Pour the sauce over the chicken and bake for 35 minutes, stirring halfway through to coat the chicken with the sauce. Serve over rice or noodles and sprinkle with green onions.
